There's something about biting into an ice cream sandwich that really makes you feel like a kid again. I guess it's because there is simply no elegant way to eat it! These gorgeous, eye-catching treats are always a hit with both kids and adults, and its not hard to see why. An ice cream sandwich may seem like a super simple dessert to make, but there are a few useful tricks...

The first time I tasted a madeleine, I couldn’t understand what all the fuss was about. I found it to be rather dry and bland, a little like on over-baked cupcake. A few years later when next I tasted a madeleine, it was a revelation! It was crispy on the edges and light and fluffy on the inside, with just a hint of lemon flavour. Before I knew it I had devoured 5 of them!I now know that the deliciousness of a madeleine depends on 1) having a light and airy batter and 2) being served very, very fresh –...

Gingerbread is one of those flavours that is synonymous with Christmas, and it also happens to be one of my favourite flavours to bake with! These cupcakes are light, fluffy and loaded with fragrant gingerbread spices. The rich cream cheese icing (made with Lancewood cream cheese) is the perfect topping, and a mini gingerbread man adds some crunch and a dose of cuteness. This is definitely one to add to the holiday baking list!Note: If you don't have a mini gingerbread man cutter, a star or Christmas tree look equally cute. Or simply use some festive sprinkles if you prefer!Gingerbread fans,...

Last week Huletts sent me a hamper of their delicious syrups and invited me to take part in their tongue-twister challenge. Brett and I had a lot of fun trying our hand at the various phrases - click here see how we did! If you'd like to have a crack at it, click here to do the Tongue-twister challenge too!  I used Huletts Golden syrup to make these easy and delicious Golden Syrup Puddings. The recipe is much like that of a cake, but the puddings are baked in a water bath and have a generous amount of golden syrup...

A Pavlova is always a showstopper, but this Turkish Delight Pavlova is on another level! The filling is made with the new Lancewood Turkish Delight double cream yoghurt which gives it the most beautiful pink colour and dreamy texture, without being too sweet. I've used dried rosebuds, pomegranate rubies and pistachio's to decorate it but you could also use raspberries, rose petals I've shared some tips on how to make the perfect pavlova below. If you like this recipe, try these meringue nests! Tips on making Pavlova: Use the correct size eggs, otherwise the ratio of sugar to eggs will be out.Avoid making...

I just love the simplicity of a self-saucing pudding, and this Granadilla one is my favourite! It's made with Lancewood's Low Fat Granadilla Yoghurt, which adds a delicious fruity tang to the pudding and keeps the batter nice and moist too. It may seem slightly counter-intuitive but making a self-saucing pudding actually involves pouring a sauce on top of your batter before baking. In the oven, the batter rises and the liquid layer sinks to the bottom resulting in a soft and spongy pudding (with a crunchy crust I might add) and a tangy, syrupy sauce at the bottom. I prefer...

If it's an easy dessert you're looking for, it doesn't get much better than this! These Cheat's Créme Brûlée's are made with chocolate and yoghurt, and require no baking! Amazingly, when you add melted chocolate to Lancewood's Plain Double Cream yoghurt it not only sweetens it but creates a creamy, custardy texture. Then just add a flavour of your choice (vanilla, orange or lemon zest, a pinch of cinnamon or dash of liqueur) then top with a crunchy brûléed sugar topping and you have a simple yet sophisticated dessert! I initially tested the recipe with white chocolate (and a splash of...

My love of Salted Caramel is so strong that I could not resist another Salted Caramel recipe! Macarons seemed an obvious choice - being rather sweet already they benefit from the hint of salt and touch of bitterness from the salted caramel. Also, the lovely creamy and gooey texture of the caramel filling makes for a delicious contrast with the crisp, chewy macarons. As with all my macaron recipes, I use the Italian meringue method which requires a sugar thermometer to cook the sugar syrup before adding to the egg whites. Personally, I find this method much more reliable than the...

Biscuits & Cookies, Brownies & Bars, Recipes / 30.08.2022

I love making cookie bars! With a texture that lies somewhere between a brownie and a cookie, they are deliciously soft and chewy with a crisp crust. Another reason I love them is they are fair bit quicker to make than cookies, as there is no dough-chilling or rolling required. Simply press the mixture into a pan and bake! These particular cookie bars are flavoured with creamy peanut butter and loaded with chocolate chips. Eat them warm with ice cream for dessert, or snack on them just as they are. There really is no time of day that's not ideal...

I recently posted several Peppermint Crisp Tart- inspired recipes on Instagram, and was again amazed at just how popular this dessert is! Based on the overwhelmingly positive response I received, I felt it was about time I shared a new PCT-inspired recipe. It's one that I've been wanting to try for a while, and I must say it turned out even better than I had hoped.I guess combining two perfect things (Brownies and Peppermint Crisp Tart) is guaranteed to produce a spectacular result! The brownies are rich and fudgy., with just the right amount of creamy caramel and minty Peppermint...
