In an ironic twist of fate, I married a man that doesn't have a sweet tooth. He's not a fan of desserts or chocolate or cake. I know, right?! I learned early on though that he does have one weakness when it comes to desserts: Apple Crumble. My husband loves Apple Crumble so much that he developed his own recipe which he knew only by "feel" (yet could duplicate perfectly every time he made it!). I can honestly and unbiasedly say his apple crumble recipe is perfect. Seriously. The apples are cooked just enough (not mushy but not too hard)...

Although we've never met in person, I feel like I've known Caroline Toich for years. She is the masterful baker behind Sweet Caroline's Cakery and I've been following her Instagram account closely ever since I saw one of her beautiful creations. Recently I spotted a batch of freshly made Banana Bread Rusks on Caroline's Instagram stories and immediately contacted her for the recipe. After one bite I knew the recipe was a winner. I asked her if I could share it with all of you, and she kindly agreed! These Banana Bread rusks start out as a sweet, dense banana...

It may be the middle of winter in South Africa, but that's never stopped me from enjoying a slice of ice cream cake. Especially one as magnificent as this one! Peppermint Crisp Tart (and all its variations) has proven to be a perennial favourite so I couldn't resist adding another recipe to the collection. This Peppermint Crisp Ice Cream Cake has a crunchy Tennis Biscuit crust, caramel ice cream layer, choc-mint ice cream layer, and a vanilla ice cream layer with Peppermint Crisp pieces. If you can bring yourself to slice through the beautiful layers and take a bite, you'll...

I realised recently that I have four macaron recipes on the blog, yet somehow I never got round to sharing my all-time favourite - Chocolate Macarons! For the most part, once you've mastered a basic macaron recipe, you can make just about any type of macaron you want by simply changing what flavour and colour you add, and using different fillings (buttercream, ganache etc). All of my macaron recipes are based on one standard recipe. In order to make these Chocolate macarons I had to tweak the recipe slightly. The reason for this is that the addition of cocoa powder...

Admittedly I'm a bit behind on this one, but better late than never I say! Just a few weeks ago, I came across pan-banging cookies for the first time. They've actually been around for almost 2 years now, and were made famous by Sarah Kieffer of The Vanilla Bean Blog. What makes these cookies special is the banging of the baking tray several times during baking and again after baking, resulting in an incredible texture. The cookies form glorious ripples and wrinkles, making them crispy at the edges, and chewy and soft in the middle. I think it's important that there...

I adore making celebration cakes! It's a chance to experiment a little and play around with decorating techniques. The resulting cake simply must have that wow-factor that the recipient will remember and talk about for years! Funny thing though, when I was tasked with making a birthday cake for a male friend, I struggled a bit! So many of the beautiful cakes out there tend to look quite feminine. Not this Chocolate Whiskey Cake though! Big chunks of chocolate bars and little Whiskey bottles will have everyone fighting for their favourite piece. With hints of whiskey in the chocolate cake,...

We've spoken about dessert mash-ups before (in my Lemon Meringue Fudge recipe). Only good things can happen when you merge the best elements of two desserts into one sensational combo. Take the spiced apples and crunchy crumble topping of an apple crumble. Now add in the rich creaminess of a vanilla cheesecake. The result is a spectacular showstopper of a dessert. Crunchy, creamy, fruity and cinnamony. As if eating two desserts in one go wasn't decadent enough, the addition of a salted caramel sauce takes this Apple Crumble Cheesecake to the next level of indulgence. This dessert requires a little effort, but your hard work will...

I was recently nominated to take part in the Pink Pudding Challenge by Chef Megan Meikle from Grei restaurant at the Saxon Hotel. The Pink Pudding Challenge is part of the Pink Table Project, a Cancer awareness and fundraising initiative. The goal of the Pink Table Project is to prove that healthy eating can still be exciting and delicious, since a healthy diet is a contributing factor in preventing certain cancers. My task was to create a healthier dessert, particularly one that was lower in sugar. As you all know, I'm not normally one to shy away from sugar. But...

Biscuits & Cookies, Brownies & Bars, Recipes / 17.05.2019

A few weeks ago I was in the mood for something really decadent and thought back to my Chocolate Chip Cookie Oreo Brownies. With a choc-chip cookie layer, Oreo layer and brownie layer, they truly are an indulgent treat! I wanted to create a variation on those, something equally decadent but with a different flavour. Peanut butter cookies are one of my weaknesses, and I love the combination of chocolate and peanut butter. So that's what led me to make these Peanut Butter Cookie Brownies. Instead of Oreo's for the middle layer, I used chocolate-coated peanuts, which add a...

Breakfast & Brunch, Recipes, Tarts & Pastries / 03.05.2019

You may be surprised to find a somewhat healthier post happening today! However, I can assure you this Granadilla and Granola Breakfast Tart is healthy enough to have for breakfast, but still decadent enough to feel like an absolute treat. I first tested out this recipe for Easter brunch and was not very impressed with the result. The yoghurt filling very quickly made the granola base soggy. I could barely slice it, it was such a mess. Luckily this problem was easy to solve by simply straining the yoghurt before-hand. This very simple process simply removes excess liquid and...
