Ever since I spotted one of these beautiful Ice Cream Drip Cakes on Pinterest, I've been looking for an excuse to make one. Finally, the perfect occasion - my twin niece and nephew had their 3rd birthday party and Auntie Astrid was given free rein in making them each a cake! The sight of figs in the shops always signals the end of summer to me. Which is sad, but not really, because figs are amazing! The combination of ice cream, popcorn and caramel may seem a little strange at first but let me assure you, it is a wonderful combination indeed. The slightly salty, crunchy popcorn adds a totally new dimension to the sweet, creamy vanilla ice cream.
