I have been wanting to make marshmallows for a very long time. So when I got my beautiful Kenwood Chef Titanium stand mixer as a birthday gift, the first thing I made was these yummy vanilla marshmallows! I generally believe that anything home-made tastes better than shop-bought, but certain home-made goodies are really streets ahead of the bought variety. Marshmallows fall into that category. The texture is just so light and fluffy, they almost melt in your mouth. Just like little puffy clouds. Once you have mastered the basic recipe, you can play around with all sorts of flavours and colours too. You...

Everybody loves little food. It's a thing. Make a miniature version of something and it's instantly a hit. Why? Maybe it's the cute factor. Or maybe because there is less guilt associated with eating it. Or is it because people love trying lots of different things? Why commit to 1 slice of cheesecake when you can nibble on a whole variety of goodies instead! I made these little cheesecakes for a picnic and they worked perfectly. Having bite-size version's means no need to slice and serve.  No mess, no fuss! They are also fab if you are serving up a variety of...

Halloween is as good a reason as any to get baking. This is a great time to get extra creative and make something a little different. Like some creepy eyeballs for example. Edible of course! In a previous post I spoke about the deliciousness of cake pops. As well as the fact that they are rather time-consuming to make. A special occasion, like a Halloween party definitely warrants a little extra effort. Kids and adults alike will certainly be staring when they see these creepy treats and the treats will be staring right back at them! In my opinion, no Halloween table would be complete...

You may remember the Cake Pop craze which dominated the baking world a few years ago. I'm not ashamed to admit I jumped on that bandwagon with great enthusiasm. Bakerella, the inventor of the Cake Pop, remains one of my food heroes to this day. A Cake Pop is a mixture of cake crumbs and icing, rolled into balls, placed on a stick like a lollipop and dipped in chocolate. They are moist, delicious and a real delight to look at. I will say this though, they are rather a lot of work to make. For this reason, they are great for a...

My husband and I have recently relocated, and are temporarily staying at an Airbnb until we can move into our new home.  As soon as we arrived at the Airbnb I scouted out the kitchen. Sadly it was not very well equipped - no mixer, no scale, no baking trays, not even a mixing bowl to be found! My fingers were twitching to get baking though, so I racked my brain for a simple recipe that requires next to no equipment to make. I came up with this old favourite of mine, a super quick and easy recipe that delivers extremely...

A crunchy shortbread crust, a zesty lemon layer topped with a light, fluffy 'meringue'. Nope it's not Lemon Meringue Pie. It's Fudge. A beautiful combination of all the delicious flavours you would expect from a Lemon Meringue Pie, concentrated into an adorably cute slice of fudge. This is what is known as a dessert mash-up. Two classic desserts merged into one! I'll be honest with you, this is not TRUE fudge. True fudge is made with butter, sugar and cream - all boiled together and then beaten to a thick mixture. This is kind of a cheat's version, using condensed milk and white chocolate. The...

Chocolate salami is not salami at all - it is a delicious chocolate log filled with nuts, biscuits and a dash of liqueur. The name simply comes from the salami-like appearance. Originally from Italy (or Portugal, depending who you ask), it tastes best when served with a glass of port or liqueur after dinner. Chocolate Salami looks beautiful when presented on a wooden board, partially sliced and ready to nibble on. When it comes to the ingredients, why not get creative? As long as you stick to the basic recipe, you can use any biscuits, nuts and liqueur you like. You can also replace some of the...
