I love making cookie bars! With a texture that lies somewhere between a brownie and a cookie, they are deliciously soft and chewy with a crisp crust. I am simply addicted to these peanut butter biscuits. They are absolutely packed with peanut butter flavour yet, unlike many other peanut butter biscuits, they aren't over-the-top sweet.
