Recipes, Sweets & Treats / 12.10.2017

Chocolate purists will tell you that white chocolate is not true chocolate. It doesn't even really taste like chocolate! This is because it contains no cocoa solids at all. As a result, it is much sweeter than milk or dark chocolate and lacks that dark, slightly bitter cocoa flavour. Some years ago, the technique of caramelising or roasting white chocolate became a trend. For very good reason. By heating the sugars in the chocolate, the flavour changes from (some might say sickly) sweet to nutty, toasted and caramel-like. So delicious! I find the best way to enjoy this unique flavour is in...

If you've ever been to Kamers, you know that you are guaranteed to discover at least one beautiful or wondrous thing there. This year I discovered Buttercrunch. My sister and I were tasting all the lovely samples at the confectionery corner, and found ourselves returning over and over to a nutty, crunchy sweet. After polishing off all the tasters, I felt the least I could do was purchase a box of these. That, and I needed a reference sample so that I could recreate this heavenly treat in my own kitchen. I'll be honest here - it took some trial and error until I...

Brownies & Bars, Recipes / 04.07.2017

Raw Vegan Brownies. Not what you were expecting from me, was it?  It's true, I usually aim for decadence at all costs without much consideration for health or dietary requirements. But isn't it time our vegan friends got to enjoy some decadent treats too? These "brownies" have a dense and fudgy texture, with a lovely bit of crunch from the nuts. Fresh Medjool dates (currently in season) provide just enough sticky sweetness, and the cacao nibs impart the rich chocolate flavour. Cacao nibs are a very pure, unsweetened form of chocolate made by crushing cacao beans. If you are sceptical about trying these, rest assured that I would not put my...

After developing my Apple Crumble Granola and Chocolate Granola, I realised my granola's were heading in a very dessert-like direction. Stopping at two flavours just didn't seem right, so I finished off the trio with this delicious Pecan Pie Granola. Using real maple syrup is the key to getting a pecan pie flavour - caramelised and syrupy. It costs a fair amount but trust me, you wont regret it. And you'll have plenty left over to pour over your blueberry pancakes.  The seeds and coconut flakes are optional, but make it that little bit healthier. PS. If you love Pecan Nut Pie, you'll love these...

All the lovely seasonal fruit that becomes available as the seasons change is a great inspiration for my baking. At this time of year it's the plums and pears that catch my eye. A few weeks ago we were having a large group of friends around and I needed a relatively light dessert to feed a crowd, that could be prepared in advance. This Pear and Hazelnut Tart fit the bill. The crisp pastry, the creamy, nutty filling and the sweet pears complement eachother perfectly. It's a stunning dish to present, and nice and easy to serve too! A note on puff pastry....

Autumn is here! I love this time of year - the crimson and gold trees and crunchy carpets of leaves on the streets. It also means it's dark when the alarm clock goes off in the mornings, which can make it a bit of an effort to get out of bed. So why not reward yourself with this delicious Apple Crumble granola? The combination of apple and cinnamon is a classic one, and a perfect way to celebrate the warming, spicy flavours of autumn. Add milk or yoghurt for a delicious breakfast, or sprinkle over ice cream or custard for a quick...

I have a sister who loves to bake, just like I do. When I stayed with her recently, I tasted her latest creation - this totally addictive chocolate granola. She worked hard at perfecting the recipe, and then kindly shared it with me. I promised that I'd send her a shout-out for that. So thanks Sandra! Considering how delicious this chocolate granola tastes, I was quite surprised to find that is also quite healthy. Healthy is not really my thing, so I added my own special touch - in the form of some chocolate chips. There, that's better! Not only is this granola delicious and fairly healthy...

It was my Mom's birthday last week, so I gave her the choice of what cake she'd like for the occasion. She requested a Carrot Cake, which I was pleased about as it tied in beautifully with International Carrot Cake day on 3 February! This cake has a delicious melt-in-the-mouth texture and is just spicy enough to enhance the sweet carroty goodness. I used “mixed spice” which is a blend of sweet spices available in South Africa (although originally from Britain where it is also known as pudding spice). The flavour of mixed spice is similar to "pumpkin pie spice" - use this...

If you are on the hunt for a quick and delicious home-made gift, look no further. This white chocolate bark is so easy to make, and the bright colours just scream "festive", making it perfect for this time of year. In order to get beautifully glossy chocolate that will break with a sharp snap, you need to temper it. But don't let that word scare you! It's easy to do. The reason we temper chocolate is to encourage the cocoa butter in the chocolate to harden into a specific crystalline pattern, which maintains the gloss and texture for a long time. When chocolate is melted and...

Muffins & Buns, Recipes / 11.08.2016

Bananas. As much as I like them, I always seem to have a few over-ripe ones lying in the fruit bowl. Why? Because the whole bunch ripens at exactly the same time and no matter how much you like banana's, five in one day is too many.  Since I hate wasting food, my solution is to transform them into a delicious batch of banana muffins. Not just any muffins though. These ones have a sweet and crunchy brown sugar crumble topping that transforms them from boring to blissful! These muffins are best served the day you make them, preferably warm from the oven with a generous smudge of...
