These easy mini lemon tarts came about on one of those really manic days. I was short on time but had to prepare some snacks for book club. I am simply addicted to these peanut butter biscuits. They are absolutely packed with peanut butter flavour yet, unlike many other peanut butter biscuits, they aren't over-the-top sweet.
