Refreshing fizzy cocktails are not just for summer days! I used delicious Clemengolds® to make an easy gin cocktail that will brighten up the dullest of Winter days. This delightful drink has a bold and citrusy flavour. It’s made with freshly squeezed Clemengold® juice, a dash of lime, and a spicy ginger syrup.
Clemengold®s are super-juicy and seedless, so juicing them is really quick and easy. Their sweet flavour perfectly balances out the slightly herbal notes of the gin, sourness of the lime, and heat from the ginger. Serve your Clemengold cocktail over ice, top with sparkling water and don’t forget to decorate with a beautiful slice of Clemengold®. For an equally delicious alcohol-free version, simply omit the gin!
Ingredients
(serves 5)
180ml ginger syrup (¾ cup) *recipe below
250ml gin
250ml freshly squeezed Clemengold® juice (1 cup)
100ml fresh lime juice
250ml chilled sparkling water (1 cup)
2 cups ice cubes
5 fresh Clemengold® slices
a handful of fresh mint leaves
For the ginger syrup:
200g sugar (1 cup)
250ml water (1 cup)
60ml grated fresh ginger (¼ cup)
Directions:
- Start by making the ginger syrup. Place the sugar and water into a small saucepan over low heat and stir until dissolved. Add the grated ginger and bring to the boil. Simmer for 10-15 minutes until thick and syrupy. Set aside to steep for at least 1 hour, (longer if you prefer a stronger ginger flavour) then strain into a jar and refrigerate until ready to use.
- To make the cocktail, add the ginger syrup, gin, Clemengold® juice and lime juice to a cocktail shaker with a few ice cubes and shake well.
- Add ice cubes to 5 tumblers, divide the cocktail mixture between them, then top up with sparkling water. Decorate with fresh Clemengold® slices and mint leaves.
- Serve immediately!
