The arrival of naartjies in the supermarket signals that winter has arrived.  A firm favourite among South Africans, naartjies are known as mandarins or tangerines in other parts of the world.  Considering their abundance at this time of year, I felt it would be unthinkable not to create a delicious recipe using them. It was not hard to do so. I mean, what's not to love about their bright, glossy peel and juicy, sweet flesh? Keeping with a South African theme, I incorporated the fruity notes of Rooibos tea. The resulting cake is dense, citrusy and utterly "lekker". Baking it in a...

I used to love ginger loaf as a child, and discovered that my husband did too. I think the last time I baked one was a good 15 years ago! So it was high time I baked it again. Making it was thoroughly enjoyable - there is something very satisfying about mixing up the dark and spicy molasses-rich batter. Being quite a dense texture, I used to spread a generous amount of butter on my slice of ginger loaf. Not this one though - it comes with its own creamy icing that negates the need for any buttering! The rich, citrusy cream cheese icing really breathes...

I know, I know. Easter is all about chocolate. But that doesn't mean you can't mix it up a little and try something completely different! This triple-layered Speckled Egg Coconut Cake is the perfect show-stopper to end your Easter meal. It's made with light and fluffy coconut flavoured sponge cake, and iced with a coconut cream buttercream. Phyllo pastry works fabulously as a nest to hold the pretty speckled eggs that decorate the cake (so you will get some chocolate after all!). The fun part of course is the speckling. A little head's up - things are gonna get messy! So be...

It was my Mom's birthday last week, so I gave her the choice of what cake she'd like for the occasion. She requested a Carrot Cake, which I was pleased about as it tied in beautifully with International Carrot Cake day on 3 February! I consulted my beloved Hummingbird Bakery Cookbook for a recipe, and the resulting cake was a huge hit! It has a delicious melt-in-the-mouth texture and is just spicy enough to enhance the sweet carroty goodness. The original recipe makes use of ginger but I substituted this with mixed spice instead. Use either pecan nuts or walnuts to add a lovely...

You may remember the Cake Pop craze which dominated the baking world a few years ago. I'm not ashamed to admit I jumped on that bandwagon with great enthusiasm. Bakerella, the inventor of the Cake Pop, remains one of my food heroes to this day. A Cake Pop is a mixture of cake crumbs and icing, rolled into balls, placed on a stick like a lollipop and dipped in chocolate. They are moist, delicious and a real delight to look at. I will say this though, they are rather a lot of work to make. For this reason, they are great for a...

Pound cakes date back hundreds of years and were baked by our grandmothers and their grandmothers too. Traditionally a pound cake consists of a pound of butter, a pound of sugar, a pound of eggs and a pound of flour, hence the name. How easy is that! Even the most inexperienced baker can remember the recipe by heart, and bake a delicious pound cake at a moment's notice. These days most so-called pound cakes have been adapted so much they barely resemble a pound cake at all. Whilst I have no problem adapting a recipe to improve it, I quite like the...

This is no ordinary cake. For starters it's made with delicious Milo for a unique, malty chocolate flavour. Then there's the extra sweet and creamy condensed milk icing. Since we're being quite decadent anyway, let's make it a triple decker too. Go big or go home! I love cake. I love icing. I love condensed milk. But it's the crunchy Milo sprinkles on the outside that really do it for me. Most South African's grew up drinking Milo (it's Australian, not South African...

If you don't know about the mirror glaze craze, I can only assume you've been temporarily living on Mars. It all began when Olga Noskova shared photos of her creations on Instagram. Before long they had gone viral and for good reason. There is just something about the mirror-shine that is so mesmerising, you can't look away! A mirror glaze will transform a boring old cake into a sophisticated show-stopper.  It will most certainly be a talking point among your guests as they ogle over the glossy, reflective shine. Mirror Glaze The Sweet Rebellion from Astrid Field on Vimeo. All you need to do this yourself is a kitchen...
