Pina Colada Popsicles


We’ve had the most beautiful hot summer in Cape Town. Sadly its coming to an end and autumn is on its way! Luckily with our amazing climate here in South Africa, it’s still warm enough to enjoy these super-easy and totally refreshing Pina Colada popsicles.
With just 4 ingredients and a blender, you can whizz these up in no time. They’re dairy-free, gluten-free AND vegan so they make a fab treat to have on hand in the freezer for any unexpected guests. For alcohol-free, kid-friendly lollies, simply omit the rum. You can also add ½ tsp of finely grated lime zest for an extra kick of flavour if you like. Or stick to the classic recipe below – I think they’re perfect just as they are!

Ingredients:

(makes 8-10 popsicles)

1 x 440g tin pineapple chunks in syrup
1 x 400ml tin coconut milk
30ml fresh lime juice (2 tbsp)
125mls white or spiced rum (½ cup) – optional

Directions:

  • Add all the ingredients to a blender and blend until smooth.
  • Pour into ice lolly/popsicle moulds and place an ice cream stick into the centre of each one, not quite pushing down all the way.
  • Freeze for at least 8 hours.
  • To unmould the popsicles, dip the moulds in warm water for about 15 seconds then gently loosen to remove.
