This is one of my favourite desserts when I need something comforting that requires minimum prep. Not only is it incredibly easy to make but is also very forgiving. Don't have maple syrup? Use honey. Don't have hazelnuts? Use almonds. Don't have vanilla pods? Use a teaspoon of cinnamon. Don't have rum? Use Frangelico or port. You can really get creative with the ingredients and customise it just to your liking. I've made this recipe many times with slightly different ingredients, and each time it is delicious! All that's needed is a something creamy on the side -...

Blondies are perhaps considered to be the less popular sister of the Brownie. Why? Because, for most people chocolate trumps vanilla. However, after tasting these Brown Butter Blondies, I'm certainly questioning where my preference lies. By simply browning the butter beforehand, the flavour of these Blondies is enhanced with a delicious nuttiness. The texture is not cake-like, but dense and moist when you sink your teeth into one. A bit of crunch from some toasted hazelnuts, a burst of sweetness from white chocolate chunks and there you have it - the perfect Blondie. Ingredients: (Makes about 16) 175g salted butter (¾cup) 225g brown sugar eg...

This beautiful Fig and Frangelico cake is sure to turn some heads. The deep purple crown of fresh figs and generous cascade of sauce will entice the senses of your guests even before they know it's full of Frangelico! The cake is composed of three layers of hazelnut and fig sponge soaked in a boozy Frangelico sauce, then sandwiched together with a creamy mascarpone icing and decorated with fresh figs and more Frangelico sauce. It's a gorgeously grown-up and sophisticated dessert that's suited to a celebration. The whole cake can be made and assembled up to 2 days in advance, then simply...

Chocolate purists will tell you that white chocolate is not true chocolate. It doesn't even really taste like chocolate! This is because it contains no cocoa solids at all. As a result, it is much sweeter than milk or dark chocolate and lacks that dark, slightly bitter cocoa flavour. Some years ago, the technique of caramelising or roasting white chocolate became a trend. For very good reason. By heating the sugars in the chocolate, the flavour changes from (some might say sickly) sweet to nutty, toasted and caramel-like. So delicious! I find the best way to enjoy this unique flavour is in...
