As far as fruit goes, cherries are kind of in their own league! With their juicy sweet flavour and rich ruby colour, they elevate any dish and this Cherry Chocolate Mousse Tart is no exception. It's an absolute showstopper and the best part is that achieving the 4 glorious layers requires just 7 ingredients! The base is a simple chocolate cookie crust, which is topped with a layer of fresh cherry halves. Next is a simple 2-ingredient chocolate mousse, followed by dollops of thick Chantilly cream. To crown it all off, a generous amount of beautiful fresh cherries! And there you...

These snowy Rocky Road Ice Cream Trees are the perfect dessert to end off your festive meal. Made with creamy vanilla ice cream, mini marshmallows, toasted pistachios, colourful glacé cherries and a variety of Bakers Choice Assorted® Biscuits, they are jam-packed with flavour and texture. If you’re wondering how on earth to achieve the beautiful Christmas tree appearance, you need nothing more than some regular paper, baking paper and sticky tape to form the ice cream cone, plus some tall glasses for the cones to stand in. The rest of the recipe is as easy as a little chopping and stirring,...

With just a few weeks left of cherry season, I wanted to share one of my favourite cherry recipes with you - these utterly divine Black Forest Cupcakes! The recipe is based on a classic Black Forest Gateaux (or cake), which consists of layers of chocolate sponge cake, cherry filling and whipped cream and chocolate shavings to decorate. Traditionally, Kirshwasser (a liqueur made from cherries grown in the Black Forest region in Germany) is brushed onto the cake layers or added to the cherry filling, and it is thought that this is where the name of the cake comes from....

It’s that time of year when delicious juicy Cherry Time™ cherries are in season! Just like last year, I was invited to visit the Cherry Time farm in Worcester. We had a short demo on how to correctly pick cherries (each stalk individually by hand!) followed by a stunning picnic lunch in the orchards. After that, there was time to pick as many cherries as we could fit in our baskets (with a few cheeky nibbles inbetween!).While admiring my harvest of juicy plump cherries, I got to thinking how gorgeous they look just as they are. So instead of using...

Sponsored. The sight of Bakers Choice Assorted® in the stores is a sign that Christmas is around the corner and it’s time start making some indulgent festive desserts! You may have noticed that the packaging has had an upgrade, but did you know that Bakers Romany Creams® Classic Choc has now been added to the mix? Even more yumminess to enjoy! I like to buy a few boxes of Bakers Choice Assorted® and use some of the biscuits in my Christmas recipes, and of course share the rest when entertaining family and friends (except the chocolate-coated ginger biscuits, I keep...

I was one of a select few guests that was invited to visit the Cherry Time farm in Worcester this past weekend. We had a fantastic day picking cherries, learning all about cherry agriculture, and enjoying a picnic lunch in the cherry orchards. I've always loved using cherries in desserts but after learning how tricky they are to grow, I have a new appreciation for these gorgeous little fruits!I returned home with an abundant harvest of plump and juicy cherries, just crying out to be used in a fancy, festive dessert. I really wanted to hero the cherries, so much...

Sponsored. When Bakers® sent me a box of Bakers Choice Assorted® to make a festive dessert with, I had a really hard time choosing which of my favourite favourite biscuits to use! As such I decided to use all of the biscuits to make this delicious dessert sharing board.  I used 3 of the biscuit varieties to make mini desserts: mini Bakers Red Label® Lemon Cream trifles, Bakers Topper® cherry swirl ice cream sandwiches and mini Bakers Nuttikrust® caramel cheesecakes. Each recipe makes 12 mini desserts, which look beautiful when arranged on a large board or platter with some fresh berries, chocolate...

As you may know, I love making classic desserts with a twist! Last year I made a trifle with traditional flavours but a slightly different presentation - a Trifle Slice. This year I wanted to make use of the delicious flavour combination of chocolate and cherries but layer it up in the traditional way and make a Black Forest Trifle. I was so happy with the result! The rich flavours of dark chocolate and black cherries give this dessert a grown-up revamp, and I think the contrast of colours looks great too. With fresh cherries in season now, it's a great...

Muffins & Buns, Recipes / 23.03.2018

Raisins are not really my thing. Hot Cross Buns however, are. A bit of a dilemma for me. My solution to this problem in the past has been to pick each and every raisin out of my hot cross bun before I can enjoy it.  A better solution of course is to make my own hot cross buns. I've been keen to do this for ages, and naturally thought of going the chocolate chip direction. Eventhough I'm not mad about raisins, I think Hot Cross Buns need some kind of fruit to compliment the spices. I was thrilled to discover dried sour...
