Custard Yoghurt Toast 2 Ways


Custard Yoghurt Toast went viral on TikTok earlier this year, and although I’m a bit late to the party I’m so glad I tried it out! It’s made with a few basic ingredients – bread, double cream yoghurt, egg and honey and takes just 10 minutes to whip up. Whether you enjoy it for breakfast, dessert or an anytime snack, you’re going to love the creamy custardy texture combined with the crunchy toast – yum!
The traditional version features a vanilla custard topped with berries (usually strawberries) but I’ve developed a chocolate and almond version too. I’d love to know if you try them and which flavour is your favourite. Ordinary white bread works great for this, but for an extra treat I recommend using brioche.

Ingredients:

(Serves 4-6)

Vanilla Berry Custard Toast:
3 – 4 slices white bread, or brioche
30ml LANCEWOOD Double Cream Plain Yoghurt (2 Tbsp)
1 large egg
15ml honey (1 Tbsp)
5ml vanilla essence (1 tsp)
3 strawberries, hulled and sliced

Chocolate Almond Custard Toast:
3 – 4 slices white bread, or brioche
30ml LANCEWOOD Double Cream Plain Yoghurt (2 Tbsp)
1 large egg
15ml honey (1 Tbsp)
15ml cocoa (1 Tbsp)
45ml flaked almonds, lightly toasted (3 tbsp)

Directions:

  • Preheat the oven to 180°C. Place the slices of bread on a large baking tray. Use a tablespoon to press down the centre of each slice, to create space for the custard.
  • For the vanilla berry custard toast, add the LANCEWOOD Double Cream Plain Yoghurt, egg, honey and vanilla essence to a small bowl. Mix well until smooth. Place about 3 tablespoons of the mixture on to each slice of bread, spreading it evenly. Top with the sliced strawberries. 
  • For the chocolate almond custard toast, combine the LANCEWOOD Double Cream Plain Yoghurt, egg, honey and cocoa in a small bowl. Mix well until smooth. Place about 3 tablespoons of the mixture on to each slice of bread, spreading it evenly. Top with the flaked almonds. 
  • Bake for 8-12 minutes, or until the custard is just set. Cool on the baking tray for 5 minutes, then serve.

TIP: To toast the almond flakes, placed non-stick pan on high heat. Add the flaked almonds and shake the pan frequently to toss the almonds, until they start to change colour and smell toasty. Immediately pour the almonds onto a plate or baking tray to cool. Once completely cooled, store in an airtight container.
