Biscuits & Cookies, Brownies & Bars, Recipes / 14.08.2018

What makes a recipe "magic"? How about adding 7 ingredients to a baking tin, popping in the oven, and removing perfectly layered bars like this?* If you're impressed already, then just wait until you taste these Magic Bars. Oh. My. Word. I was actually quite taken aback by the deliciousness of them. Imagine a crunchy biscuit base, topped with a soft chocolate layer, chewy coconut and almonds and lastly a layer of crunchy golden granola. All these flavours and textures do a magic happy dance in your mouth, and before you know it you're reaching for another one.  At this point I expect...

I love slice ‘n bake cookies! None of the messy business of rolling out and cutting the dough. Simply slice into rounds and bake! These Chocolate Nougat Cookies have a rich, chocolate flavour and buttery texture like shortbread. The bits of nutty nougat add a crunchy pop of sweetness to every bite. The recipe makes two logs of dough. I like to bake one and freeze the other - handy when that cookie craving hits! Ingredients: 200g butter, softened 100g castor sugar 5ml vanilla essence 225g flour 30g cocoa pinch of salt 75g almond nougat, chopped into very small pieces Directions: Cream together the butter and castor sugar for 4-5 minutes, until...

Juicy, ripe plums are right up there with my favourite fruits. These Spiced Plum Crumble Bars make excellent use of them! A shortbread base and crisp, buttery crumble topping encase the sweet plums, which actually reduce and become jammy in texture during baking. So delish! Adding a touch of spice really brings out the autumn flavour of this bake. Ingredients: For the base: 150g butter, softened 75g castor sugar 5ml vanilla extract 225g flour pinch of salt For the plum layer: 7-8 medium plums 1 tsp mixed spice 1 tsp cinnamon 2 tbsp sugar 1 tbsp cornflour For the crumble topping: 240g butter, cold 180g castor sugar 340g flour pinch of salt Directions: Preheat the oven to 180°C. Grease and line a 20...

I previously discovered that brownies and choc-chip cookies are phenomenal friends when I made my Choc-chip Cookie Oreo Brownies. Which got me thinking about S’mores. Traditionally these American campfire treats are made by sandwiching chocolate and a marshmallow between two Graham Crackers (digestive-like biscuits). This combination of layers inspired me to make a S’mores-inspired Layer Cake using choc-chip cookies, brownies, chocolate ganache and marshmallow meringue. I was expecting it to be pretty delicious - I mean you can’t really go wrong with that combo, right? But let me tell you - this cake was delicious on another level! And rather grand-looking too,...

Something I miss greatly about living in England is the tradition of the "Cream Tea". Freshly baked scones, with lashings of jam and clotted cream (with a cup of tea on the side of course) - simply delightful! Clotted cream, which we sadly can't get in SA, is a very thick, rich and spreadable cream. In some parts of England it is spread on the scone first instead of butter.  Nevertheless, I feel that one can make up it's absence by simply using generous quantities of thickly whipped cream or double cream instead. Classic scones should have a golden crust and...

I recently hosted a baby shower for a friend, so naturally pink macarons were in order! When it came to planning the flavour, I immediately thought of Raspberry and White Chocolate - one of my favourite combinations. Macarons being the tricky little guys that they are, it's best not add any fruit purée, so I used a concentrated raspberry flavour (available at baking stores). I love using creamy ganache as a filling for macarons but this time I decided to whip the ganache. The resulting texture is divine - it's light and fluffy, almost like a buttercream but less sweet.   Ingredients: Macarons: 75g water 150g...

I had a lot of fun making these Valentine's Day Fortune Cookies! Once you get the hang of the folding and curling, they are very easy to make. And you get to write your very own personal message for your loved one to receive as a sweet surprise! I used a good quality almond extract for the flavour and it really adds something special. The cookies actually taste great without the chocolate too, but in the spirit of Valentine's Day I felt they needed a little "bling"! Ingredients: 2 large egg whites 45ml butter, melted and cooled 2 tsp water ½ tsp Nielsen-Massey Almond Extract (available...

A few weeks ago, I spotted something rather breathtaking on Instagram. A woman (you could call her a genius actually) named Adi Klinghofer invented an incredible "cake" and it went viral. The "cakes" are actually more like a cream tart - 2 layers of biscuits, filled and topped with cream and beautifully decorated with fruit, flowers, sweets, meringues and macarons. The wonderful thing about this Celebration Cream Tart is that you need no fancy equipment or skills to make it! You can make the biscuits into numbers, letters or any shape you like (with Valentine's Day around the corner, I naturally...

Since it's the month of love and all, I'm posting my favourite "romantic" recipes. Obviously, macarons had to make an appearance! If you like macarons but find them a tad too sweet, these Blueberry Cheesecake Macarons are just for you. The cheesecake-inspired filling is rich and creamy but still a little tangy. And then there's the fresh burst of fruity flavour from the blueberry compote. What really makes these Blueberry Cheesecake Macarons so gorgeous is the beautiful little speckles of actual dried blueberries. A bit like a macaron version of a speckled egg! That's thanks to the addition of blueberry powder to...

Now that I've gotten the hang of making macarons, I can't get enough of it! Sweet and delicate, macarons add a sophisticated touch to any tea party, and make for a beautiful homemade gift too. Another bonus is that they carry a variety of flavours very well, so you can really let your imagination run wild! When choosing the flavour for my next batch of macarons, one of my favourite desserts came to mind. The combination of a thick, creamy custard and crunchy, almost bitter caramel is what makes Crème Brûlée the popular dessert that it is. In order to replicate...
