This is one of my favourite desserts when I need something comforting that requires minimum prep. Not only is it incredibly easy to make but is also very forgiving. Don't have maple syrup? Use honey. Don't have hazelnuts? Use almonds. Don't have vanilla pods? Use a teaspoon of cinnamon. Don't have rum? Use Frangelico or port. You can really get creative with the ingredients and customise it just to your liking. I've made this recipe many times with slightly different ingredients, and each time it is delicious! All that's needed is a something creamy on the side -...

The sight of figs in the shops always signals the end of summer to me. Which is sad, but not really, because figs are amazing! I felt that this Roasted Fig and Walnut Maple Ice Cream would be a perfect dish to cross over from summer into autumn. The warm, caramelised figs and toasted walnuts hint at autumn, the cool ice cream refreshing enough for a late summer evening. It’s really worth splurging on a bottle of real maple syrup for the ice cream - the flavour is incomparable! Use what’s left to make some Pecan Pie Granola or drizzle over...

After developing my Apple Crumble Granola and Chocolate Granola, I realised my granola's were heading in a very dessert-like direction. Stopping at two flavours just didn't seem right, so I finished off the trio with this delicious Pecan Pie Granola. Using real maple syrup is the key to getting a pecan pie flavour - caramelised and syrupy. It costs a fair amount but trust me, you wont regret it. And you'll have plenty left over to pour over your blueberry pancakes.  The seeds and coconut flakes are optional, but make it that little bit healthier. PS. If you love Pecan Nut Pie, you'll love these...

Brownies & Bars, Recipes / 10.05.2016

Paleo? Banting? Watching your weight? You might want to look away now. Low carb these are not. Pretty much the opposite really. They are basically composed of sugar, syrup and butter. Oh and pecan nuts. That makes them healthy, right? The trouble with pecan pie bars is that they are so incredibly moreish, it's impossible to have just one.  The crumbly, buttery shortbread is made all the better by using brown sugar. This not only gives it a lovely golden colour but also adds a hint of caramelised flavour. The topping has a gorgeously nutty, syrupy flavour and is just soft enough...
