I'm a big fan of frangipane tarts and have been meaning to try a chocolate version for a while. Frangipane is a sweet pastry cream made with ground almonds that is usually used in baked tarts along with fruit. This pear and chocolate frangipane tart recipe is made with a chocolate pastry as well as a chocolate frangipane filling so it will certainly keep the chocoholics happy! This Chai Spiced Apple Rose Tart was inspired by the very talented Julie Jones. For those who don't know her, she is the author of The Soulful Baker and creates the most beautiful tarts and pies. Around the time of my birthday, apricots start making an appearance on the shelves. This causes much excitement in my life. Apricot season in South Africa is very short - only about 4 weeks. All the lovely seasonal fruit that becomes available as the seasons change is a great inspiration for my baking. At this time of year it's the plums and pears that catch my eye. A few weeks ago we were having a large group of friends around and I needed a relatively light dessert to feed a crowd, that could be prepared in advance. This Pear and Hazelnut Tart fit the bill. I discovered this recipe in a Fair Lady magazine very early in my baking days - 1994! More than 20 years later it has proven to stand the test of time exactly as it is, no changes or improvements required.
