I've been meaning to try my hand at a Salted Caramel recipe for some time. They are, in my opinion, one of the most addictively delicious sweets around! I recently attended the Saveur Blog Awards in Memphis and discovered the perfect locally-made Salted Caramel. With some restraint, I managed to not eat ALL of them so that I had some reference samples to bring back to South Africa and try to copy. In my research I found that there are 2 different ways to make these sweets - the first is by cooking all the ingredients at the same time until...

Hot chocolate, Milo, Horlicks. Those comforting hot drinks that get us through miserable winter days. For some time, Horlicks has not been available in SA, so I was absolutely delighted to discover that it's back on the shelves again. It didn't take me long to think up a recipe using Horlicks. I've been meaning to make fudge for some time, and  a creamy, malty Horlicks fudge sounded like a good idea to me! Fudge is unusual amongst confectionery in that you actually want sugar crystals to form. In toffees, brittles, marshmallows, nougat and caramels, you avoid this at all costs! The...

My love for Snickers chocolate bars began about 5 years ago when my husband and I went travelling. No matter what country we were in, Snickers seemed to be available. At times, like in China, I think it was the only Western chocolate bar around. A familiar and delicious remedy for homesickness! It turns out, Snickers is the most popular chocolate bar in the world and has been around for 90 years! The best news of all is now you can make your very own Snickers bars at home. Although there are a several layers it is actually very straighforward to...

I have many favourite sweet treats, but cinnamon buns are right up there. In the top 5 at least! Not much compares to sinking your teeth into a warm, soft, cinnamony bun, getting sticky icing all over your fingers (and face in my case - I don't hold back when it comes to cinnamon buns). Variety is the spice of life as they say, so I mixed things up a bit. I kept the delicious cinnamon and sugar filling, then added some buttery apple pieces and drenched the baked buns in a decadent salted caramel sauce. The result is these irresistable...

After sharing my Caramel Peppermint Crisp truffles and Peppermint Crisp Tart Ice Cream Sandwiches I figured you had probably had enough of the Peppermint Crisp/Caramel flavour combo. I was wrong! My recent Instagram poll has confirmed that 92% of you never get tired of a Peppermint Crisp Tart inspired treat. So I took that on board and whipped up a delicious Peppermint Crisp and Caramel Rocky Road. With just 4 ingredients and 15 minutes to spare, you can create these deliciously chewy, crunchy, caramelly delights. I doubt you'll need more convincing than that, but if you do, remember they are calorie-free! Ok, that's...

Now that I've gotten the hang of making macarons, I can't get enough of it! Sweet and delicate, macarons add a sophisticated touch to any tea party, and make for a beautiful homemade gift too. Another bonus is that they carry a variety of flavours very well, so you can really let your imagination run wild! When choosing the flavour for my next batch of macarons, one of my favourite desserts came to mind. The combination of a thick, creamy custard and crunchy, almost bitter caramel is what makes Crème Brûlée the popular dessert that it is. In order to replicate...

It seems that Salted Caramel is one trend that is going nowhere! I'm quite pleased about that. It has so many delightful uses. Pour it over ice-cream, apple crumble, or pancakes. Use it to fill donuts, eclairs or sandwich your cookies or cakes together. As you can see, it is simply essential to have a go-to Salted Caramel sauce recipe. You may be surprised by how easy the recipe actually is. A sugar thermometer is not essential, but patience definitely is! Once your syrup is boiling it takes a good 15 minutes to turn a nice amber colour, and in this...

If you told me to make a dessert with coconut biscuits, caramel and peppermint chocolate I would say that is way too many flavours in one dish! Yet Peppermint Crisp Tart is one of the most well-loved desserts in South Africa, proving that the flavours work together fabulously. These Caramel Peppermint Crisp truffles combine all the delicious flavours of the famous dessert into little bite-sized balls of joy. If you can bear to give them away, these would make a fabulous gift for that friend of yours. You know, the one who LOVES Peppermint Crisp Tart - we all know at least...

If you've ever been to Kamers, you know that you are guaranteed to discover at least one beautiful or wondrous thing there. This year I discovered Buttercrunch. My sister and I were tasting all the lovely samples at the confectionery corner, and found ourselves returning over and over to a nutty, crunchy sweet. After polishing off all the tasters, I felt the least I could do was purchase a box of these. That, and I needed a reference sample so that I could recreate this heavenly treat in my own kitchen. I'll be honest here - it took some trial and error until I...

For most people, their favourite thing about crème brûlée is cracking the crisp sugar topping. For me, its the first bite of rich, creamy custard that lies beneath. I suppose it's the contrast of these two textures that makes this dessert so heavenly. Crème Brûlée is classically a vanilla flavoured dessert. Since I had already decided to make it in teacups instead of ramekins, it got me thinking about the flavour. Earl Grey is my tea of choice, so in keeping with a tea theme I infused the cream with Earl Grey tea leaves. I was very pleased with the result....
