I previously discovered that brownies and choc-chip cookies are phenomenal friends when I made my Choc-chip Cookie Oreo Brownies. Which got me thinking about S’mores. Traditionally these American campfire treats are made by sandwiching chocolate and a marshmallow between two Graham Crackers (digestive-like biscuits). Something I miss greatly about living in England is the tradition of the "Cream Tea". Freshly baked scones, with lashings of jam and clotted cream (with a cup of tea on the side of course) - simply delightful! Back in the day, Red Velvet cakes were made with fresh beetroot and no food colouring. A few weeks ago, I spotted something rather breathtaking on Instagram. A woman (you could call her a genius actually) named Adi Klinghofer invented an incredible "cake" and it went viral. When I see a cupcake this cute, I actually don't really care how it tastes. I simply have to make it! I got the inspiration to make these honey cupcakes with cream cheese icing after seeing a similar idea online. As a marvellous stroke of luck I had a beautiful, big jar of eucalyptus honey just waiting to be used in a recipe. Luckily these pretty cupcakes taste as amazing as they look.
