This is one of those shamelessly decadent recipes. I mean, as if a crumble wasn't yummy enough, you make it even more delicious by making it a chocolate crumble. And a fruit filling? Nope, we're going with a creamy caramel custard instead! It's no secret that chocolate and caramel are a match made in heaven. The combination of textures is what really makes these Chocolate and Caramel Crumble  Squares a winner though. An ultra creamy, smooth caramel custard sandwiched between 2 layers of buttery, crumbly biscuit - is indeed as good as it sounds! Since the caramel filling is quite sweet, I...

In November last year, I was fortunate enough to visit the United States for the first time. I was invited to attend the Saveur Blog Awards in Memphis, being nominated in the Best Baking and Sweets Category. I was honoured to be included in a group of such talented and inspirational bloggers from around the world! It was also a great opportunity to check out all the delicious goodies one can buy in the US. I actually spent about 3 hours just wandering the aisles of a Walmart! The variety of items available is quite staggering. In my quest to taste...

What makes a recipe "magic"? How about adding 7 ingredients to a baking tin, popping in the oven, and removing perfectly layered bars like this?* If you're impressed already, then just wait until you taste these Magic Bars. Oh. My. Word. I was actually quite taken aback by the deliciousness of them. Imagine a crunchy biscuit base, topped with a soft chocolate layer, chewy coconut and almonds and lastly a layer of crunchy golden granola. All these flavours and textures do a magic happy dance in your mouth, and before you know it you're reaching for another one.  At this point I expect...

Blondies are perhaps considered to be the less popular sister of the Brownie. Why? Because, for most people chocolate trumps vanilla. However, after tasting these Brown Butter Blondies, I'm certainly questioning where my preference lies. By simply browning the butter beforehand, the flavour of these Blondies is enhanced with a delicious nuttiness. The texture is not cake-like, but dense and moist when you sink your teeth into one. A bit of crunch from some toasted hazelnuts, a burst of sweetness from white chocolate chunks and there you have it - the perfect Blondie. Ingredients: (Makes 16) 175g butter 225g brown sugar (I used light muscavado) 2...

My love for Snickers chocolate bars began about 5 years ago when my husband and I went travelling. No matter what country we were in, Snickers seemed to be available. At times, like in China, I think it was the only Western chocolate bar around. A familiar and delicious remedy for homesickness! It turns out, Snickers is the most popular chocolate bar in the world and has been around for 90 years! The best news of all is now you can make your very own Snickers bars at home. Although there are a several layers it is actually very straighforward to...

Juicy, ripe plums are right up there with my favourite fruits. These Spiced Plum Crumble Bars make excellent use of them! A shortbread base and crisp, buttery crumble topping encase the sweet plums, which actually reduce and become jammy in texture during baking. So delish! Adding a touch of spice really brings out the autumn flavour of this bake. Ingredients: For the base: 150g butter, softened 75g castor sugar 5ml vanilla extract 225g flour pinch of salt For the plum layer: 7-8 medium plums 1 tsp mixed spice 1 tsp cinnamon 2 tbsp sugar 1 tbsp cornflour For the crumble topping: 240g butter, cold 180g castor sugar 340g flour pinch of salt Directions: Preheat the oven to 180°C. Grease and line a 20...

I previously discovered that brownies and choc-chip cookies are phenomenal friends when I made my Choc-chip Cookie Oreo Brownies. Which got me thinking about S’mores. Traditionally these American campfire treats are made by sandwiching chocolate and a marshmallow between two Graham Crackers (digestive-like biscuits). This combination of layers inspired me to make a S’mores-inspired Layer Cake using choc-chip cookies, brownies, chocolate ganache and marshmallow meringue. I was expecting it to be pretty delicious - I mean you can’t really go wrong with that combo, right? But let me tell you - this cake was delicious on another level! And rather grand-looking too,...

Can you believe that chocolate brownies have been made, and eaten, since 1906? The fact that brownies have remained popular for more than 100 years is surely testament to their deliciousness. Over the years, many variants have been invented. Of all of these, Cheesecake Swirl Brownies are probably my favourite (oh, and these Choc Chip Cookie Oreo Brownies of course!). Not only does the white cheesecake swirl liven up the appearance of plain old brown brownies, it also balances out the dark and rich chocolate flavour. As artistic as they look, you need only a skewer to create this beautiful effect! Ingredients: Brownie mixture: 170g...

After sharing my Caramel Peppermint Crisp truffles and Peppermint Crisp Tart Ice Cream Sandwiches I figured you had probably had enough of the Peppermint Crisp/Caramel flavour combo. I was wrong! My recent Instagram poll has confirmed that 92% of you never get tired of a Peppermint Crisp Tart inspired treat. So I took that on board and whipped up a delicious Peppermint Crisp and Caramel Rocky Road. With just 4 ingredients and 15 minutes to spare, you can create these deliciously chewy, crunchy, caramelly delights. I doubt you'll need more convincing than that, but if you do, remember they are calorie-free! Ok, that's...
