Sponsored. We all know and love the juicy, zesty flavour of a Clemengold® -perfectly delicious as it is! They also work wonderfully in baking, and I’ve really enjoyed experimenting with them the last few weeks. What I love about using Clemengolds® in desserts is their amazing versatility. Their sweet, juicy mandarin flavour works equally well in a light, citrusy dessert as it does in a rich, chocolate cake; in a refreshing summer cocktail or a comforting winter pud. These Clemengold® Custard Tartlets allow that delicious mandarin flavour to really shine through. The tangy, creamy Clemengold® custard is encased in a crisp pastry shell, and topped with light...

Sponsored. Refreshing fizzy cocktails are not just for summer days! I used delicious Clemengolds® to make an easy gin cocktail that will brighten up the dullest of Winter days. This delightful drink has a bold and citrusy flavour. It’s made with freshly squeezed Clemengold® juice, a dash of lime, and a spicy ginger syrup. Clemengold®s are super-juicy and seedless, so juicing them is really quick and easy. Their sweet flavour perfectly balances out the slightly herbal notes of the gin, sourness of the lime, and heat from the ginger. Serve your Clemengold cocktail over ice, top with sparkling water and don’t forget to decorate with...

Sponsored. It’s that glorious time of year when our shops are filled with a variety of gorgeous citrus fruit. My favourite amongst these is juicy, sweet Clemengolds® (which are exclusively available at Woolworths). If I can get to them before my husband devours the whole bag, I love using them in baking as they are easy-to-peel and seedless as well! This Chocolate and Clemengold® Truffle Torte is incredibly rich and decadent, with a hint of zesty citrus. As it contains no flour, the texture is dense and fudgy (plus it’s gluten-free!). The Clemengold® syrup adds just the right amount of sweetness and freshness to balance...

Around 3pm is when I normally hit that late afternoon slump and start craving a cuppa. Preferably with a little sweet treat of sorts! These blueberry streusel muffins are the ideal pick-me-up. They have everything a perfect blueberry muffin should have - a soft and tender crumb, loads of juicy blueberries and my favourite part - a delicious crunchy streusel topping. One could certainly give the topping a skip, but I feel that once you’ve tried it you simply won’t want to do without it! These muffins also freeze exceptionally well - I like to wrap them up individually before...

Last week a neighbour gifted me a bag of beautiful ripe passion fruit. I set about making a big batch of passion fruit curd (recipe coming soon!) but had plenty fruit leftover. I've been meaning to reshoot a raspberry cheesecake recipe from many years ago and decided to remake it with a passionfruit topping instead! I was so pleased with the flavour and thought it looked really striking too. Despite technically being a "no-bake" cheesecake, I find that baking the crust for a few minutes really amps up the toasty, biscuity flavour of the cheesecake. This combined with a creamy, almost...

Sponsored. 14 June is International Cupcake Day, that’s right – an entire day dedicated to cupcakes! When I hear the word “cupcake”, the image that comes to mind is that of a classic vanilla cupcake topped with a huge swirl of pink icing, decorated generously with sprinkles. The perfect treat for any birthday party!  However, in order to honour the humble cupcake I wanted to do something extra-special. What I really love about cupcakes is that you can remove a little of the centre and fill it up with any number of delicious fillings. Then, once the cupcake is iced, this filling...

In celebration of National Doughnut Day, I wanted to make some filled doughnuts as it's something I haven't done before. (Side note: technically this is an American holiday, but I tend to get on board with foodie days because why not!)To help me decide on a filling, I asked my Instagram followers to vote between 4 options. The options were Biscoff, Nutella, Caramel/Peppermint Crisp or Vanilla custard. It was a very close race, but these classic vanilla custard doughnuts came out tops. I was secretly quite pleased as these were the ones I was hoping to make! I've often thought...

Sponsored.   13 May is Apple Pie Day, and this is one holiday I am super-excited to get on board with! Although Apple Pie is considered an all-American dessert, it was actually invented by the Brits back in the 14th century and included figs, pears, raisins and saffron. It was only in the 18th century that the first apple pie recipe was printed in America where it quickly gained popularity, and is now considered America’ favourite dessert. In the spirit of celebrating this delicious, comforting dessert I went about developing an Apple Pie recipe with a twist. Replacing the pastry on top with a lattice of...

I debated calling this "Chocolate Cream Pie" but since pies are technically made up of a filling between two crusts, this is actually a tart (with only a bottom crust). Whatever you wish to call it, it is delicious. I mean seriously indulgent and rich and decadent and just darn delicious! Although uncomplicated in it's flavour - it is chocolate through and through - it 's far from one-dimensional. Each layer adds its own special magic: a crunchy chocolate cookie base, then a fudgy, melt-in-the-mouth ganache all topped off with clouds of softly whipped cream. Many ganache tarts do without...
